I just made a variation of this for a quick lunch (finally got around to picking up beets at the Farmers Market last Saturday) and HOLY CRAP it is delicious. The whole thing took me maybe 15 minutes to put together, too.
What I changed:
- regular yellow onions instead of shallots
- chickpeas instead of potatos (tossed them in the pan with the onions and garlic to get all yummy and warm)
